Vesemir

Vesemir is the oldest witcher at Kaer Morhen, the keep where he trained Geralt and generations before him. Weathered, wry, and unsentimental about the brutal trade he practises, he keeps the fortress running and its traditions alive, dispensing hard-won wisdom and dry humour in equal measure to anyone who'll listen.

Kim Bodnia plays him as a man who has made peace with everything the witcher's life has cost him, which gives his gruffness real warmth underneath. He's the show's memory and its conscience, delivering exposition about a dying order without ever feeling like a lecture, because Bodnia makes every line sound lived-in rather than recited.
